Pumpkin Protein Pancakes

Last weekend we gained an hour for daylight savings time. That means I've been waking up extra early, completely rested, with an extra hour to spare! So why not try out a new pancake recipe?


If you're looking to get your day started with protein, boost your metabolism, and enjoy pancakes without the guilt, look no further. These pumpkin pancakes will satisfy your pancake cravings without all the bad carbs!

Pumpkin Protein Pancakes
  • 1/2 or 1 scoop vanilla whey protein powder
  • 3 tablespoons canned pumpkin puree
  • 2 tablespoons almond milk
  • 2 tablespoons ground flax seed
  • 2 egg whites
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
Heat skillet to medium, spray with non-stick spray. Mix all ingredients; spoon into skillet. Cook about 3 minutes per side. Top with pure maple syrup, peanut butter, nuts, fruit...you get the point.
