Cranberry Applesauce Muffins


Before I even tried these muffins, I decided they would taste good just because of the way they looked! The cranberries are so beautiful; the bright red burst of color through the wheat muffin is striking. So much so that my mouth is salivating at the sight.

Cranberry Applesauce Muffins

  • 1 cup unsweetened applesauce - I used my homemade applesauce!
  • 1/3 cup vegetable oil
  • 1 egg, beaten
  • 2 cups flour (whole wheat)
  • 1/2 cup sugar (I used about 1/8 cup; since my applesauce is so sweet)
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup cranberries
  • 1/2 cup pecans, chopped
Preheat oven to 350. Line muffin tins with paper liners, or grease and flour.

Mix applesauce, oil and egg. In another bowl, combine flour, sugar, baking soda, salt and cinnamon. Make a well in the center of flour mixture, add applesauce mixture and stir just until moistened. Fold in cranberries and pecans. Spoon into muffin tins. 
Bake for 25-30 minutes, or until knife inserted in center of muffin comes out clean. Cool in pan 2 minutes before removing (if you can wait that long!). 

I love the pop of color from the cranberries! I also love the pop of flavor in my mouth when I bite into a cranberry in this muffin. Yum!
