My sweet grandmother gave me this recipe. I love this dish for two reasons: one because it tastes fresh and delicious; and two because it reminds me of Mom B. She is the warmest, most loving grandmother. She's funny and clever, smart and sweet, and incredibly generous and thoughtful.
She even let me give her a hair mustache! I don't know many grandmas that would do that.
Broccoli-Cauliflower Salad
- 1 head cauliflower, chopped
- 1 bunch broccoli, chopped
- 1 red onion, chopped
- 1 green bell pepper, chopped
- optional: mushrooms, tomatoes
Dressing
- 1 cup light mayo (can use less)
- 1/4 to 1/2 cup sugar
- 1/2 cup salad oil
- 1/3 cup vinegar (cider or white)
- 1 slight teaspoon pepper
- 2 teaspoons dry mustard
Make 24 hours ahead of serving. Chill in refrigerator. Add tomatoes, mushrooms just before serving.
Keeps for several days.
This recipe make A LOT, so I usually half everything, unless serving a large crowd. We had about three helpings each at dinner tonight and there was still plenty left over!
