Another of my grandmother's recipes! I love using her recipes because she's an amazing cook, and whenever I get the chance to make a dish or meal of hers, I'm reminded of her.
Chicken Tortilla Soup
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken bullion (cubes dissolved in boiling water)
- 4 cups reduced sodium chicken broth
- 1/2 cup tomato juice
- 1/2 cup tomato sauce
- 1 teaspoon ground cumin
- 1 jalapeño, seeded and chopped
- 1 teaspoon salt
- 3/4 teaspoon worcestershire sauce
- 2 breasts cooked, diced chicken (use more or less--it's up to you!)
- 1 large tomato, diced
- 1 package corn tortillas (10)
- cilantro, avocado and cheese for topping
In large pan, sautee onion and garlic. Add chicken bullion and broth, tomato juice and sauce, cumin, jalapeño, salt and worcestershire. Bring to boil. Cover and simmer for 30 minutes. Add chicken and diced tomato. Cook another five minutes. Cut tortillas into strips and drop in. Gently stir and serve. Top with cilantro, cheese and avocado.
