AND it has beer in it.
- extra virgin olive oil
- 1medium yellow onion, chopped
- 5 cloves garlic, minced
- 1 teaspoon salt
- 2 teaspoons chili powder
- 1 teaspoon oregano
- 1 tablespoon tomato paste
- 1 chipotle chili en adobo, plus 1 tablespoon sauce (I like to add more chili to make it extra spicy)
- 1 pound lean ground turkey
- 1 12-ounce mexican lager-style beer (or any beer!)
- 1 14.5-ounce can whole peeled tomatoes, with juice
- 1 15.5-ounce can kidney beans, rinsed and drained
- cilantro, avocado, greek yogurt, cheese, tortilla chips -- all optional
Heat oil in large pot, add onion, garlic, salt, chili powder and oregano. Cook about 3 minutes.
Stir in tomato paste and chipotle chili plus sauce. Cook another minute or two.
Add turkey, cook until meat loses raw color.
Add beer and simmer until reduced; about 10 minutes.
Add tomatoes, crushing in fingers. Add beans, and bring to a boil. Cook uncovered until thick; about 10 minutes.
Top with your favorite chili accouterments.
