Turkey Beer Chili

There's nothing better than hot, spicy chili on a cold day. I love this recipe because it only takes about 30 minutes to make! So if I didn't plan ahead - like we usually must do with chili - I can have a piping hot bowl in only a half-hour.

AND it has beer in it.


Turkey Beer Chili


  • extra virgin olive oil
  • 1medium yellow onion, chopped
  • 5 cloves garlic, minced
  • 1 teaspoon salt
  • 2 teaspoons chili powder
  • 1 teaspoon oregano
  • 1 tablespoon tomato paste
  • 1 chipotle chili en adobo, plus 1 tablespoon sauce (I like to add more chili to make it extra spicy)
  • 1 pound lean ground turkey
  • 1 12-ounce mexican lager-style beer (or any beer!)
  • 1 14.5-ounce can whole peeled tomatoes, with juice
  • 1 15.5-ounce can kidney beans, rinsed and drained
  • cilantro, avocado, greek yogurt, cheese, tortilla chips -- all optional
Heat oil in large pot, add onion, garlic, salt, chili powder and oregano. Cook about 3 minutes. 

Stir in tomato paste and chipotle chili plus sauce. Cook another minute or two.

Add turkey, cook until meat loses raw color. 

Add beer and simmer until reduced; about 10 minutes.

Add tomatoes, crushing in fingers. Add beans, and bring to a boil. Cook uncovered until thick; about 10 minutes. 

Top with your favorite chili accouterments.
